Pasta Salad Picnic Recipes

Pasta salads lend themselves very well to picnics. Quick to make and pack in a basket, they are the perfect accompaniment to grilled meat or served alone as a main dish. Almost any type of pasta can be used, and fusilli, farfalle, and macaroni are particularly good for pasta salads as they retain their shape and texture well. Don't be afraid to experiment with the growing number of whole-grain pastas now available. They have added texture and flavor and are a healthier alternative. As well, make sure to use plenty of seasonal vegetables and fresh herbs to showcase your picnic prowess.

Chile Bowtie Pasta

2 cups uncooked farfalle (bowtie) pasta
cup plain low-fat yogurt
1 tablespoon Dijon mustard
teaspoon salt
1 jalapeno pepper, seeded and chopped
3 small tomatoes, chopped
2 green onions, chopped
1 clove garlic, minced

Cook pasta according to directions on package. Drain. Rinse with cold water and drain again. Mix pasta and remaining ingredients. Cover and refrigerate at least 2 hours until chilled. Feel free to add chopped cooked chicken or turkey to salad.

Creamy Tomato Pasta Salad

2 cups uncooked fusilli
cup plain nonfat yogurt
cup tomato juice
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
2 tablespoons red wine vinegar
teaspoon salt
teaspoon pepper
1 cup cherry tomatoes, halved
1 green pepper, chopped
cup sliced black olives

Cook pasta according to directions on package. Drain. Rinse with cold water and drain again. In large bowl, mix yogurt, tomato juice, herbs, vinegar, salt, and pepper until creamy. Add remaining ingredients and toss. Cover and refrigerate at least 2 hours until chilled.
