Low Fat Picnic Recipes

For many of us, counting calories is part of our daily ritual. With the growing rates of obesity in the United States, worrying about fat grams, carbohydrates, and the sugar content of our foods has become a national pastime. And, unfortunately, unhealthy, fast food has never been more widely available. The concept of having a leisurely picnic where you and your friends and family can spend an enjoyable couple of hours socializing and eating nutritious, low fat food is a welcome change from picking up a burger at a drive-thru. Consider throwing a simple get together on a weekend day. It doesn't require hours of planning or gourmet cooking ability. With these simple, low fat recipes, you can feed a group of six, and you'll probably find that a relaxing picnic in a park is much more enjoyable than gorging on a hamburger and fries while seated in your car.

Spicy Popcorn
Makes 10 cups

1 tablespoon water
4 teaspoons margerine
1 teaspoon ground turmeric
teaspoon salt
teaspoon pepper
1/8 teaspoon cayenne pepper
10 cups unsalted popcorn
2 tablespoons grated Parmesan cheese

Cook all ingredients except popcorn and cheese in a 6-inch nonstick skillet for 3 minutes or until margarine is melted. Drizzle over popcorn mixture, toss, and sprinkle with cheese.

Garbanzo Bean Salad
Serves 6

2 15-ounce cans garbanzo beans, drained
cup tomato juice
2 tablespoons chopped fresh parsley
2 teaspoons Dijon mustard
teaspoon salt
teaspoon black pepper
cup red onion, chopped
carrot, chopped

Mix tomato juice, parsley, mustard, salt, and pepper in large bowl. Stir in beans, onion, and carrot. Cover and refrigerate.

Grilled Chicken Kebabs
Serves 6

1 lbs boneless, skinless chicken breasts (cut into 1" cubes)
cup white wine
cup fresh parsley
cup chicken broth
1 teaspoon dried marjoram
2 tablespoons fat-free mayonnaise
2 teaspoons honey
teaspoon salt
teaspoon pepper
6 kebab skewers

Place chicken cubes in glass baking dish. Place remaining ingredients in blender or food processor and blend for 30 seconds. Pour over chicken, cover dish, and refrigerate for 2 hours.

Thread chicken onto skewers. Set oven temperature to broil. Spray rack of broiler pan with nonstick cooking spray. Place skewers on rack in pan. Broil chicken for approximately 5 to 7 minutes. Spoon remaining marinade over chicken. Broil about 3 minutes longer or until chicken is cooked fully.
