Picnic Salad Recipes

With the bounty of fruits and vegetables available throughout the spring and summer, fresh salads are a must. Throwing together a quick, colorful, and healthy salad for a picnic is the ideal way to celebrate the wide variety of produce during the warmer months. Don't be limited to iceberg lettuce and sliced tomatoes. Be adventurous! Salad possibilities are endless when you begin to experiment with the multitude of vegetables, fruits, legumes, and herbs that you can pick up at your local grocer or farmers' market. The following recipes are just guidelines. Feel free to substitute your favorite items to customize your picnic salad.

Garbanzo Bean Salad

2 15-ounce cans drained garbanzo beans
cup tomato juice
2 tablespoons chopped fresh parsley
2 teaspoons Dijon mustard
teaspoon salt
teaspoon pepper
cup chopped red onion
cup grated carrot

Mix tomato juice, parsley, mustard, salt, and pepper in a large plastic bowl. Stir in beans, onion, and carrot, and toss. Cover and refrigerate 2 hours.

Jicama and Melon Salad

1 cups julienne strips jicama
1 cups small cubes cantaloupe (or watermelon)
2 tablespoons lime juice
2 tablespoons chopped fresh mint leaves
1 teaspoon grated lime peel
1 teaspoon honey
teaspoon salt

Mix all ingredients in plastic bowl. Cover and chill 2 hours.
