Beach Picnic Recipes

When the temperature heats up, those fortunate enough to live near the coast instinctively head to the beach to enjoy some fun in the sun and of course a picnic. Along with a beach towel and a bottle of sunscreen, a hibachi or small portable grill should be on your list of what to bring. Seafood is the obvious choice for a fun picnic along the shore. Here are a few favorite recipes for your next beach meal.

Hot and Peppery Grilled Picnic Shrimp

1 lbs peeled and deveined raw large shrimp
cup chopped green onions
cup lime juice
1 tablespoon soy sauce
2 teaspoons grated lime peel
teaspoon pepper
1/8 teaspoon crushed red pepper
2 cloves garlic, finely chopped
2 teaspoons sesame oil

Mix all ingredients except oil in large plastic bowl. Cover and refrigerate at least 4 hours. Pack raw shrimp still in bowl on ice to the beach. Place shrimp on hot grill and cook until they are pink in color. Drizzle with oil and serve with toothpicks.

Grilled Fish with Corn Salad

1 cup canned whole kernel corn
1 cup chopped red pepper
cup chopped red onion
1 tablespoon chopped chives
2 tablespoons white vinegar
2 tablespoons plain nonfat yogurt
2 teaspoons honey
teaspoon salt
teaspoon pepper
teaspoon curry powder
1/8 teaspoon cayenne pepper
2 cloves garlic, minced

Mix all ingredients in plastic bowl. Cover and keep on ice until ready to serve.

1 lbs lean white fish (mahi-mahi, perch, tilapia)
2 tablespoons lemon juice
1 teaspoon olive oil

Keep fish on ice until ready to grill. Grease grill with oil. Coat fish with olive oil and lemon juice. Place on grill and cook until fish flakes easily with fork (about 5 minutes). Serve fish over salad.
