Fourth of July Picnic Recipes

There is simply no better way to celebrate the Fourth of July than with a picnic. A basket loaded up with American favorites like fried chicken, potato salad, and of course, a cherry pie will please even the most finicky of picnickers. And while this meal may sound calorie and fat-laden, the following recipes are healthier versions and easy to prepare as well.

Cornmeal Chicken

3 lb. cut-up fryer chicken
2 tablespoons butter
2 tablespoons yellow cornmeal
teaspoon chopped fresh oregano leaves
teaspoon chile powder

Heat oven to 375 degrees. Remove skin and fat from chicken. Heat butter in pan, 13x9x2, in oven until melted. Mix cornmeal, oregano, and chile powder in paper lunch bag. Place chicken in bag and shake until coated. Place meaty side of chicken down in pan. Bake uncovered 30 minutes. Bake 20 minutes longer or until brown and juices run clear. Pack tightly in aluminum foil.

Country Potato Salad

2 cups red potatoes, cubed
cup nonfat buttermilk
cup lemon juice
2 tablespoons Miracle Whip salad dressing
1 tablespoon Dijon mustard
1 tablespoon chopped fresh thyme
teaspoon salt
cup chopped celery
1 red or green pepper, chopped

Heat 1 quarts water to boiling in 2-quart pot. Add potatoes. Cover and heat to boiling. Reduce heat and simmer until tender (about 15 minutes). Drain.

Mix buttermilk, lemon juice, Miracle Whip, mustard, thyme, and salt in large glass or plastic bowl. Mix in potatoes, celery, and pepper. Cover and refrigerate for at least 2 hours.

Crustless Cherry Pie 3 cups fresh pitted cherries
3 cups chopped apples (about 3 medium)
cup golden raisins
1 cup all-purpose flour
2 tablespoons butter
2 tablespoons honey
1 tablespoon brown sugar
1 teaspoon ground cinnamon

Heat oven to 375 degrees. Butter an 8x8x2 inch square pan. Mix cherries, apples, raisins, and 1 tablespoon of the flour. Spread in pan. In small bowl, cut butter into remaining flour. Add honey, brown sugar, and cinnamon until crumbly. Sprinkle over fruit. Bake about 30 minutes or until brown. Cover with aluminum foil until ready to serve.
