Great Picnic Dessert Ideas
While grilled meat may be the main course at most picnic meals, a luscious dessert is certainly the most anticipated dish. With the benefit of modern-day ice chests and coolers, you can bring almost any variety of dessert to your outdoor get-together. Whether you decide on a pie, cake, or cookies, you can rest assured that your guests will want a sweet treat to end their picnic meal.
An unexpected dessert option for a picnic is a white chocolate pound cake that can be garnished with fresh berries and whipped cream. Using a box of white cake mix, this dessert is simple to make and an excellent end to an al fresco meal.
A more traditional picnic dessert choice is the delicious peach cobbler. When peaches are in season during the summer, there is no better way to use this tart and tasty fruit. You can still make peach cobbler out of the season by using frozen sliced peaches. Make sure to thaw the peaches prior to cooking.
White Chocolate Pound Cake
Serves 12Vegetable oil for coating cake pan
Flour for dusting pan
8 ounces white chocolate chips
1 package plain white cake mix
ยพ cup milk
8 tablespoons butter, melted
4 eggs
3 teaspoons vanilla extract
3 cups sliced strawberries
1 cup whipping creamPreheat oven to 350 degrees. Lightly grease and flour a 10-inch tube pan. Melt the white chocolate chips in a small saucepan, over low heat, until melted. Place cake mix, milk, melted butter, eggs, vanilla, and white chocolate in a large mixing bowl. Blend with electric mixer on low speed for 30 seconds. Scrape the sides of the bowl and mix an additional 2 minutes on medium speed. The batter will be thick. Pour the batter into the prepared pan and place in the oven. Bake the cake until it springs back when lightly touched, about 45 minutes. Remove the pan from the oven and place it on a wire rack to cool for at least 30 minutes. Run a knife around the edge of the cake and invert it onto the rack. Allow to cool an additional 30 minutes. Serve the cake with the sliced berries and the whipping cream.
Picnic Peach Cobbler
Serves 62 lbs peeled and sliced peaches
ยฝ cup sugar
ยฝ teaspoon cinnamon
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
3 tablespoons sugar
4 tablespoons butter
2/3 cup whole milkPreheat oven to 400 degrees. In a square, glass baking dish, place peaches, cinnamon, vanilla, and sugar, gently toss. Bake for 10 minutes. In a bowl, mix flour, baking powder, and sugar. Cut in the butter using pastry fork or your fingers. The mixture should be crumbly. Add the milk and mix into a soft dough. Remove the peaches from the oven, and spoon the dough over the top of the fruit. Don’t stir. The dough will form a crust. Bake for 20-30 minutes or until golden brown. Serve with whipped cream or ice cream.
