Mexican Picnic Recipes
With Cinco De Mayo quickly approaching, why not plan a Mexican picnic fiesta to celebrate our neighbors south of the border? Many Mexican recipes are ideal for picnic fare. Guacamole and chips, a beef tortilla casserole, and a pitcher of refreshing sangria are all that you need for an outdoor Mexican celebration. Don’t forget to bring a piñata, a couple of sombreros, and some fun music to complete your Cinco De Mayo picnic.
Traditional Guacamole
Makes 4 cups4 large ripe avocados, mashed
2/3 cup jarred salsa
2 tablespoons lime juice
2 dashes of Tabasco sauce
Tortilla chipsMix avocados, salsa, Tabasco sauce, and lime juice in glass or plastic bowl. Serve with tortilla chips
Beef Tortilla Casserole
8 servings½ cup extra virgin olive oil
10 corn tortillas (cut into 2-inch strips)
1 lb. ground beef
2 fresh jalapeno peppers, seeded and finely chopped
1 onion, chopped
1 16-ounce jar salsa
1 15-ounce can pinto beans, drained and rinsed
2 cups shredded Cheddar cheese
Guacamole and sour cream for garnishHeat oil in 10-inch fry pan over medium-high heat. Cook tortilla strips in oil for one minute, stirring occasionally, until golden brown. Remove with slotted spoon and drain on paper towels.
Cook beef, chilies, and onion in same skillet over medium-high heat, stirring occasionally, until beef is brown. Drain fat.
Heat oven to 350 degrees. Grease rectangular baking dish 13x9x2 inches. Arrange tortilla strips in bottom of dish. Top with beef mixture, salsa, beans, and cheese. Bake uncovered for 25 to 30 minutes. Serve with guacamole and salsa.
Sangria
16 ½ cup servings½ cup brandy
½ cup orange flavored liqueur
1/3 cup orange juice
1 750 ml bottle red wine, chilled
1 6-ounce can frozen lemonade concentrate
2 cups chilled ginger ale
Orange and lemon slices for garnishMix all ingredients except ginger ale and fruit slices in a 3-quart pitcher. Refrigerate until chilled. Just before serving, stir in ginger ale. Garnish with orange and lemon slices.
