Picnic Sandwiches
The sandwich is the ultimate picnic food – easy to make, portable, with an infinite number of variations. While everyone loves a slice or two of turkey between two pieces of white bread, let your creativity shine when you compile picnic sandwiches. Try experimenting with artisan breads, gourmet spreads, and flavorful meats and cheeses. Add slices of fresh vegetables, and you can create a perfect lunch or dinner for your next picnic. The following sandwiches are tried and true favorites worthy of any outdoor event.
Muffaleta
The key to this sandwich is the Muffaleta spread. You can make it ahead of time, and it will store in the refrigerator for up to one week.
Spread
1 cup pitted green olives
1 cup pitted kalamata olives
½ red onion
2 tablespoons fresh basil
2 tablespoons lemon juice
1 tablespoon fresh horseradish, grated
1 tablespoon garlic, mined
1 tablespoon Dijon mustard
¼ teaspoon Tabasco sauce
¼ teaspoon Worcestershire sauce
¼ cup olive oilMix all ingredients, except oil in food processor. Gradually add oil. Transfer to glass bowl.
To make sandwiches you will need:
Mufffaleta spread
1 large round French or Italian bread
Mortadella or ham slices
Italian dry salami slices
Provolone cheese slices
Sliced black olivesCut the top off of bread. Remove the inside of the loaf. Brush the top and inside with Muffaleta spread. Layer with meat and cheese. Sprinkle with olives. Put the top of bread back on and press down. Wrap the sandwich tightly with plastic wrap. To serve, cut the sandwich into wedges like a pie.
Chicken Salad Pitas
1 cup chopped cooked chicken (or turkey)
½ cup chopped celery
1 ½ teaspoons lemon juice
¼ teaspoon salt
1/8 teaspoon pepper
¼ cup mayonnaise
1 hard boiled egg, chopped
Pita breadMix all ingredients in bowl. Slice pita breads in half and stuff with mixture. Try adding lettuce, radishes, carrots, or other vegetables for extra crunch and flavor.
